The right ale yeast in a 500g tub would be great.
500g of Notty for example.

Don't know about that. I'd be worried about handling the yeast once opened. At only €2 for a 11g pack I don't think it's worth the risk.

The 5kg bags of hops could be vacuum packed in to smaller 100g bags which would allow you to be more competitive on hop prices. I'm pretty sure this is what HBC do as their hops are unbranded and often have handwritten labels.

Yeah I think repacking the hops might be a goer. I dunno about the yeast, personally, I'd use a clean spoon from the dishwasher and be confident enough that only a yeast antagonist of some sort could live in yeast, and I'm not so sure what that would be.....
Contamination, I don't think would be a problem to be honest.

My wife has opened tins of dried yeast in the fridge for breadmaking....

5kg of hops = 50 x 100g, how many types of hop are you planning on buying? I wouldn't like to smell your house after ripping apart 20-30kg of hops, weighing and vacuum packing them But more power to you if you have that much time on your hands
I like the yeast idea but i'd like to look further into the pros and cons of storing that much yeast when it's not in a protective environment. The last thing i'd want to do is lose 60-70L of beer and have to throw away 400g of yeast trying to save a few pennies on yeast.

Alexander makes a good point here. Why risk an entire brew to save a few cents?

Anyway, I believe some of these are packed in a nitrogen environment, not so simple . . . we might give it a miss for now.

There are 100g tins which might be more appropriate, a half a kilo is a lot of yeast.
