IIRC he has already agreed to brew whatever recipe we want.

No clones, no competition, no judging panel.

[list:2hc1dnzn]Clones - we have a chance to be creative; why mimic?
Competition - [b:2hc1dnzn]is everyone who contributed cash a homebrewer, and a good one at that? Gives undue influence to only part of the group[/b:2hc1dnzn].
Judging panel - again, I paid 50 quid but I might not get to vote?[/list:u:2hc1dnzn]

I suggest we decide on a style and work up a couple of recipes.
Then the homebrewers among us are free to brew up these recipes *as samples* for all.
After that, *everyone*, whether they tasted the samples or not, votes on the recipe to brew.

Anything less seems undemocratic to me.[/quote:2hc1dnzn]
As a non-brewer I'd agree with these points.

Just to point out it was dr.d not me who said it was dogfish we decided on.

I agree with keegan ales although im not in favour of any sort of brewoff. The day was 'sold' as a brewday not a beer comp. While im against having a comp if thats what everyone decides then fair enough. My only worry is that its gonna be jan 2015 before we brew this instead of next month if we add in the comp.

What if the choosen comp beer cant be made by sam (hops not available or now out of season) and then the beer is changed anyway.

Id harbour a guess that any choosen beer by competition wont taste the same anyway when done in kinsale.

A bit of competition is always fun. How about, anyone who wants to take part brews and we compare brews/recipes in the new year. Jan/Feb meet.
If we then base the recipe on the preferred beer and make that out starting point. Consider them trial batches.

As far as a clone recipe goes, whats the point. We have the chance to come up with completely new beer here. I don't see the point in trying to recreate a beer that many will never have tried based on random untested recipes found on some site.

a clone sounds like a bad idea now alright.

what meet are we talking though? is everyone in the brew dublin based?

The Kinsale Brew - What are we brewing? 12 years 5 months ago #72

Yeah, we don't want a clone, we just have a beer to aspire to.
I have a beer conditioning now. It's not a double IPA but it's an over 6% IPA. The recipe is here.[/url:3lrgdwk8] Once it's done, we can see how it goes and it if it's good, we can use it as a base to bump up.
That said, I don't have enough fermentation control these days and my water isn't very IPA friendly.
