Speaking generally and not just about this or that bar or beer or particular, there is, as well as not buying, the option of not buying and telling other people why. There's publicising not buying because if you get other people not to buy, then perhaps the price will come down. Why not? For that matter, there is the option of buying and telling other people that the experience (or product or service) was worth the cost.
When you say it's not the consumer's place to defend, I don't know quite how you mean that to be read. Do you mean, we consumers don't have to justify our purchasing decisions one way or the other, or do you mean, we're not entitled to an opinion on how much things cost? The last would be a funny sort of view for a consumer organisation to have. Yes, it is true that publicans have costs. They know their costs exactly whereas we can only speculate. Nevertheless, many people believe there is such a thing as a fair or reasonable price for e.g. a loaf of bread, a pint of milk, etc etc or, for that matter, a pint of beer. A lot of people have think there's a fair amount of piss taking going on.
