My checklist of what you need to think of:
1. Do I have the knowledge/skill to brew beer?
2. Do I have a place to brew beer?
3. Do I have the equipment to brew beer
4. Do I have a market for beer?
5. Do I want to/or Can I go legitimate?
If yes continue, else “go under-ground and exit this list”
6. Can I fill in all the forms required by revenue?
7. Can I provide the bond/insurance guarantee that revenue want?
8. Can I comply with HSE/Waste directives/Plus all the “other fekers who stand in the way of private enterprise” requests for forms/info/indemnities
9. After answering all the above can you be “REALLY ARSED”

So thats really only 8 real points, I’m sure I’m missing a few

Leo Varadkar* has sorted it out.

Government has announced a new "red tape" web site.
It has links to all the details of how to set up all different kinds of business.
I forget what they said the address was now.
But I'm SURE it will all be in there - yeah right <!-- s:P --><img src="{SMILIES_PATH}/icon_razz.gif" alt=":P" title="Razz" /><!-- s:P -->

* Im not sure what the minister for transport, tourism and sport has to do with this - but im nearly sure they said on the radio that he announced it.

The first question you need to answer is why,why do you want to set up a brewery. It may seem like a silly question but it really is the one you first need to answer.
Next will come a clearly considered business plan,what type of beer you want to produce,one or more than one,how do you expect it to be distributed,kegs,casks,bottles.
Next come sourcing a premises suitable for brewing and acceptable to revenue.
Next comes the capital cost of your brew plant plus the cost of outfitting your premises,you will need drainage,electric and plumbing. Your energy source will need to be installed,usually electric or natural gas. If kegs are your choice of distribution,you will need to calculate a ratio of kegs for every keg you distribute,some empty,some full and in stock,some already distributed to outlets,some due for return from outlets,the further you distribute the greater ratio it will be. Also for keg beer you will need bar taps and mixed gas bottles,also cellar equipement for fitting out pubs. Bottling will require a bottling plant with labelling,packaging and pasteurizing.
When all is set up you will also need to leave room for expansion,as your brewery sales grow you should be able to install extra fermentation tanks.
Next comes your launch,you will need a good line of working capital to carry you.

I suppose all of that is why if I was setting up a brewery, I would start out as a brewpub with a view to expanding. So once you have a premises, preferably one that you can install a decent brewery in, you can think about expanding after a few years without having to move. That is the model a lot of US breweries follow.

The benefit is that you start off with a customer base and can use the profit from the pub (assuming there is one) to expand and provide beer to other venues. It works well for the Franciscan Well.

There is the added cost of having a pub of course but I think it a safer ground to start off on.

Maybe that's just me though.

I would quite agree!

Time and money and all that. There are periods in the brewing process that allows spare time. If you own a brew pub then that time can be spent in the pub.

The downside of this as a startup option is the price of the pub and the all-important license.

For a small, rented industrial unit ( cheap ) with a reaonable sized brewey setup( second=hand ) you may be looking at less than 100K. Throw in a pub/license and that now goes to more like 400K ( 300k for a licensed pub is on the cheap side )

In my original list I didn't mention finance!

If you want a brewery then you must know the cost and where the wonga is comming from
