Hope you don't mind me posting this one Nigel but I quite like the look of it. It's another of Nigel's posted on the NHC.

Tbh I'd much rather we didn't stray into the 11% region as I'd struggle to get through that much strong beer.
The Kinsale Brew - What are we brewing?

- and then we did it.
So why are we now considering recipes without any of the suggested hops?
Here is the collected wisdom of everyone who commented on hopping/style:
[list:2jcy5ag9][*:2jcy5ag9]"TheBeerNut": I like Summit and Galaxy. I don't like heavy toffee in a pale ale.[/*:m:2jcy5ag9]
[*:2jcy5ag9]"irish_goat": I like Summit, Citra, Mosaic. Don't like heavy toffee either and would prefer something around the 8% mark.[/*:m:2jcy5ag9]
[*:2jcy5ag9]"Saruman": Massive Nelson Sauvin fan.[/*:m:2jcy5ag9]
[*:2jcy5ag9]"sbillings": I'm not a huge fan of Citra, but Summit, Galaxy, Simcoe, Amarillo and Nelson Sauvin hit the spot.[/*:m:2jcy5ag9]
[*:2jcy5ag9]"Stephanos": Love motueka, though that may not be available. Would be great to use new season kiwi hops. Definitely prefer west coast IPAs.[/*:m:2jcy5ag9]
[*:2jcy5ag9]"KeeganAles": I agree with Irish Goat. Fruity little numbers like Waimea, El Dorado, and Calypso would float my boat, too.[/*:m:2jcy5ag9]
[*:2jcy5ag9]"nigel_c": El dorado would be class. Loved the brew dog el dorado from the single hop series.[/*:m:2jcy5ag9][/list:u:2jcy5ag9]
I'm extract-only, so I'm the wrong person for this job - can some better brewer step in and create a recipe based on these criteria?
