That's it? That doesn't even list the Cascade, Citra and Centennial pellets that he says he always stocks.

From that website, Topaz could substitute for El Dorado/Mosaic/any tropical fruit hop.
Throw in Summit, too, and that's enough to work with, imho.

Pushing it here but could you maybe ask if dry hopping using whole hops is an option? I'm assuming he uses pellets because they suit his kettle better. A large hop bag of whole hops shouldn't pose any problems though.
