I fond of Sneider Weisse because it really has the clovey, bubbblegummy flavour that I like. Paulaner is probably second on my list.

Franziskaner probably isn't in the same league as Schneider, Paulaner or Weihenstephaner but I still think it's very good and is easily available.

I have to agree with Hendrixcat, Sneider Weisse followed by Paulaner for me. I like most other Weissbiers too, though I think Erdinger is a bit bland, so I'll only drink it when I'm stuck.

I have heard good things about Ayinger, but have yet to get my hands on a bottle.

I have yet to find a decent Weissbier brewed by an Irish company. The Franciscan Well do a nice wheat beer, but I don't think it tastes like a Weiss.

I'd put Franziskaner up there with Schneider personally. Of course availability being a factor.

Another vote for Schneider although I also like Maisels and Weihenstephaner.

Erdinger is not the best of wheat beers but it is the most widely available and as such it's not bad as a 'fall back' beer when nothing else decent is available on tap. On a slightly related note I've noticed a lot of pubs have been getting in Hoegaarden, Budvar and Staropramen on tap recently so there must be a push on from whoever supplies them.

I was a huge fan of the late-lamented Maeve's from DBC, though it didn't really count as a Weiss either. Maguire's went through a phase of doing a fantastic dark spicy weiss, but the current incarnation is a bit insipid.
