Hi folks. I'm from Dublin and have just bottled my first batch of homebrew! - St. Peters Ruby Ale. I'm going to get stuck into another batch, this one a St. Peters Golden Ale. Hey there,

My name is Eoin and I'm currently brewing my first brew (Coopers Original Real Ale). It's been brewing since St.Patrick's Day. I'm planning on popping it into Secondary fermenter early next week for about another 2 weeks. I'm also going to do a little experiment with the brew. I'm gonna bottle 4 pints from the Primary and open one each week (after an inital bottle conditioning) to see how the flavour progresses. Has anyone done something similar in the past? Did you notice any difference or would I just be wasting the first few pints by doing this?

Welcome to the group Ales and Lang.

Eoin, I did something like that with my early batches -- I always put a few testers in 33cl bottles and opened one a week. It's a useful experiment but I eventually realised that the beer wasn't at its best until it was bottled three weeks and stopped doing it.

Thanks, think I might bottle only 2 pints so and give the first 3 weeks conditioning before sampling. I'll be due to bottle (from secondary fermenter) after about 2 weeks so there shouldn't be too long to wait for a nice brew. Hoping that I'll be tipping away at the brew in about a months from now.
