[/quote:dyql8dzf]25kg bags would only be for the base malts such as Marris Otter/Pearl/Golden Promise. I can't see anyone brewing enough to want that much specialty grain in one go.

I think something that might be useful when you're up and running is if you could provide us with a list of items that are ex stock but available for you to order from your suppliers. Obviously there will be some items (equipment for example) that you will only want to get in on special order.

True, but the point is that you will be growing up a master culture which can be infected with pathogenic bacteria. Although these will/may not survive in the brewing process and at that is generally at the end of the fermentation when the ph drop down.

A lot of theses bacteria release toxins with are very stable to ph and temp, they will even survive autoclave.

But aside from that will want you to prove it to be single culture and toxin free and that’s where the real problems begin

Hey big ears thanks for the advice on the amounts of grain. We can probably provide an ex stock list. By the way we are looking towards primarily crushed malt. Would this be a problem or is there a need for whole.

I think crushed malt will suit most of us as I don't know of anyone who has a crusher. The only factor with pre-crushed grain is it doesn't keep for as long but it still has a reasonable shelf life. Storage for hops & yeast is important though as they need to kept cool (yeast) and ideally frozen (hops) - is this something that will be possible for you? (not that I'm suggesting the other Irish homebrew shops do this, I really don't know. I believe the likes of Hop & Grape do and a lot of us order small stuff like hops and yeast from them)
