I've just had another idea ,

What if the University took it over ? they could move in and run a museum / brew pub / brewing centre of excellence and run courses in craft brewing .

It would be a profit making enterprise really ,

A little like the NMRC ( Tyndall institute ) , just for brewing .
I really think it could work , and at worst it would be a property in town for them .

There are a number of brewing in institutes (seibel) in the world, Ireland is just to small to justify one. An you could never justify the cost of purchasing a site in the middle of a city,

A good justification for research into the area specifically , to improve the margin abilities of the business model . Multidisciplinary enterprise ?

And yet the PhD candidate Alex that was at the Well last week for the Beer fest , was German .
I think you underestimate the ability we have in our Universities to draw in Students and research .
work .


My opinion is it's viable . Obviously its a complex undertaking , that would need a feasibility study to nail the exact details , something we're not going to be able to do in an internet forum . But one thing I do know , as sure as day follows night , the only requirement for any undertaking to succeed is force of will. If someone wills it to happen , it can happen .

I think it'd be well worth pitching the idea to the university. The worst that can happen is they'll say no.
