As a brewer, I admire what he is doing in attempting to recreate an ancient, pre hop beer. As someone who knows the Irish beer market, I would hate to be trying to sell it.

Does anywhere else has these plants? DIT, UCD, Limerick universities?
Joe Public won't know whether hops are used in the beer or not as long as there is some form of bittering present. There's very little hop character in a hefe anyway so he has probably chosen a good style to experiment.
