We want to brew a big beer because it's something we don't really get in Ireland. At least not very much, though there have been recent attempts. Everyone brews session beers. We want to show it can be done, done well (hopefully) and that it can be a commercially viable product.

Can see the logic in that - we'll just have to have the recipe down for it - make sure its the Best DIPA in the market

I've never really brewed one myself. Anyone on this list done a good one we can adapt?

Yeah, it's worth drilling down into exactly what we want out of this beer.


Controversial, but I'll come right out and say I'm not so interested in balance.

There are plenty of Irish brewers who are going to lash in the malts because they're afraid of what some punters might think of hops on their own - we've seen this already.

And if I can quote a certain blogger[/url:1s053mr7]: "The lack of heavy toffee in an American IPA is both literally and figuratively refreshing."

Not saying we should make a thin, hot, grapefruit bomb; just ease off the crystal.

Nigel_c of this parish had a really good one at one of the ICB meets a couple of months back. It just needed a little more aroma hops and it would have been perfect.

That beer had an OG 0f 1.104 and IBU of 138. I cant see being a very cost effective beer for Sam to brew and may kill his mash ton. Would be class though. <!-- s:D --><img src="{SMILIES_PATH}/icon_biggrin.gif" alt=":D" title="Very Happy" /><!-- s:D -->
