Ale fermentation temperature is best. It's the easiest to control on our set up and it is unlikely we can set aside tank space for a lengthy lagering period.
What yeast strains are allowable, is it just the usual suspects ie dried yeast available to micros (nottingham/S04 etc) or can for instance non-seasonal whitelabs/wyeast/brewlabs strains be used.

We're using dry yeast at the moment. I haven't tried scaling up a liquid yeast starter to full scale yet. Dry yeast would keep it simple.

How about a few days at low temps (around 3C, say) to aid clearing?
