A good read. My next brew (when I get my hands on some wheat malt) will be a wheat beer, so I read with interest.
Hopefully will be putting some of the ideas into practice in the next fortnight.

Nice article Séan,

I've been meaning to a Belgian Wit for a while but I never got around to it. I bought a couple of sachets of the Brewferm yeast but on reading it was surprised at its claims to produce wit AND hefe styles. To me they are quite different beasts so I was sceptical about the chances of producing a wit wit it (sic).

Having read your article I'm now inspired to brew a wit this summer, with the added bonus that I can blame you if it goes wrong <!-- s:wink: --><img src="{SMILIES_PATH}/icon_wink.gif" alt=":wink:" title="Wink" /><!-- s:wink: -->

I enjoyed reading your wit beer article. I'd been thinking of doing one at some stage, but now I'm inspired to do it sooner ( with agreement from Adeptus ).

Have you ever tried using Seville orange marmalade to enhance the orange flavour you get with the peel? I was listening to an old Basic Brewing podcast on fruit beer recently, in which a good Seville orange marmalade was recommended to improve the flavour in a wit.

Supposable a lot of the orangey flavor comes from the coriander seed’s

I’m glad you liked the article lads. It’s just a brain dump of what happened with a few of my brews.

The Wit beer is going down a treat, I must say. I’ll have to stick a few aside to share with you lads.

Never heard of the marmalade thing, but it sounds like a good idea. Under normal circumstances I would be cautious about adding jam of any sort to a beer, as the pectin is likely to cause haze, but in a Wit beer, that’s not a problem.
