The foam shouldn't be there at the start or at the end which is all you're worried about for checking gravities.

I just noticed your recipe includes 'regular' DME as against Wheat DME. It looks similar to a wit in other respects though. In which case cloudy is right on style <!-- s;) --><img src="{SMILIES_PATH}/icon_wink.gif" alt=";)" title="Wink" /><!-- s;) --> Windsor is renowned for not clearing well by the way. Do you think it added anything to the brew in terms of flavour or would you need to brew again with a different yeast to compare?

Maybe I made a wit without knowing so, the honey wouldn't be typical for a wit beer I thought. Maybe I'll brew it again with some wheat malt and see how it turns out. I don't think I'd use the windsor again for this brew, it was way too cloudy. Non homebrew drinkers would probably refuse to drink it.
With the small batches I could split a brew and check the taste with two different yeasts.

Honey certainly wouldn't be traditional in a wit but homebrewing is all about experimentation, isn't it?
