I do a similar thing at Christmas time. It's definitely the cold meats that bring on the urge for pickles and such. Very tasty indeed.

I've been known to bring in my own bought cheese into the bar I love it with beer so much! I like doing it on Saturday afternoons in particular where I pick up maybe 2 varieties in the Temple Bar market then slid over into the Porterhouse for a few drinks and ripped chunks of cheese. A little piece of heaven right there!

Have they ever grabbed you by the scruff and tossed you out the door?

I've never had any trouble, in any bar I've opened cheese in. As long as you're not making a mess my experience is that no-one will say anything at all.
I also know from experience that they will object to a bag of salt and vinegar chips and a cheeseburger. But I accept the reasons for this interjection.

Cheese I figure goes under the radar, as did my large tin of wasabi peas I put on the bar in O'Donoghues on Merrion Row before Christmas. Not a word said as a group of six tucked in for almost an hour. Act like its OK and it will treated as such I figure.

"These aren't the peas you're looking for."
"These aren't the peas we're looking."
"Move along."
"Move along... move along."

As long as you don't 'cut the cheese', no one should mind.
