Myself and the gf are planning a week or so in Bavaria sometime around June.

So far I'm thinking of flying to Memmingen and then spending a night in Fussen (with a visit to Nueschwanstein), 2 nights in Munich, a night in Nuremburg, a night in Rothenburg and then maybe get a train to Berlin and fly out of there after 2 nights.

We'd be travelling via train or bus so driving anywhere out of the way isn't really an option, anyone any recommendations? Are the places I've mentioned any good? Part of me would like to stay in a random Bavarian village for one night (one with a nice brewery/brewpub would be nice) but I dunno if this is really gonna be any craic, or do villages tend to be dead?

Not been myself, but Bamberg is apparently unmissable.

+1... I cant recommend Bamberg highly enough!!
Been there twice and absolutely love the place, honestly one of the nicest places I've ever been! Plus it (and its surrounding area) has the highest number of breweries per capita in the world. The city itself has 8 or 9 all pretty much within walking distance! Its also home to Schlenkerla (the famous Rauchbier). There's something timeless about the place, and drinking smoked beer directly from wooden casks is pretty special (Did I mention its €2.50 per pint!). Theres also some lovely bier Kellers with great views of the whole city as you drink your beer. Its a bit of a trek from Memmingen, but if your making your way to Berlin, its sorta on the way, and a short train from Nuremberg (about 1 hour if I remember correctly).
Its a world heritage center also so the historic center of the City has retained alot of its old charm, and there's surprisingly alot to see/do there.

Sounds good! It's on the train line from Nuremburg to Berlin anyway so it's not out of the way at all.

I might be wrong but when I was in germany trains went direct between cities with few if any any stops. Better make sure it actually stops not just passes through.
