You can forget about vodka. You can't make vodka on a pot still (or maybe you could if you distilled it about fifteen times, which would be very expensive). You need a proper column still. Also, if you were going to make it from something other than barley or wheat you would need another column to remove the methanol.

Pretty sure gin [i:16qy2prq]could[/i:16qy2prq] be made on a pot still. I could be wrong, but I don't think there are strict definitional purity requirements (abv, limits on congener levels etc). That said, my notes tell me most gin is actually made from grain neutral spirit (96 abv and produced in a column still).

We are a bit crushed about the 1800 ltr rule. We have subsequently realised the sill we were interested in from Germany only has a capacity of 40 ltrs so we really don't have an industrial size space for something of the capacity needed.

We've also had some hints from Planning that a rural location for distilling would be frowned upon in contrast to a urban/town environment.

Its a real shame as the Canadian distillery industry (at least in Nova Scotia) has no such constraints (this is where we got our idea from).

I'm pretty sure the Dingle Distillery are using pot stills for their vodka and gin.
