Hi there

I'm a new member here; I am looking to open a micro-distilliery in the West of Ireland with a view to producing vodka, rum and gin.

My family farm is unoccupied with a number of farm sheds that I would like to upgrade and convert.

I'm looking to import a sill from Germany and use local produce for source material.

I've been doing some info-gathering and am a bit daunted about the plethora of regs and planning required as well as the 10,000 min production amount per annum.

I would appreciate any advice or tips any board members may have. E.g what sort of budget should I be thinking of?

It's a minefield, I'd say. Maybe talk to the Longueville House guys: that's the only Irish microdistillery I can think of.

Is the minimum 1500 liters for a distillers licence? but i could be wrong
