Just a brief update...

The beer has finally been bottled by me and my friend so it is currently conditioning and has been doing so in the cellar for nearly three weeks now (all bottles are 75cl Champagne bottles that are corked and capped). The beer has turned out very well and I used the Girardin method of blending. Im not sure I can go into detail about the particulars. The Brett is beginning to kick in quite nicely at the two week stage and the beer is very balanced between the fruit the wine and the oak. This effect can only be achieved once as it was a freshly emptied Bordeaux barrel that carried wine for five seasons.

We got 230 bottles out of the barrel but only a small fraction will be sold (50 bottles) as we want it for ourselves <!-- s:wink: --><img src="{SMILIES_PATH}/icon_wink.gif" alt=":wink:" title="Wink" /><!-- s:wink: -->

The beer will be called... N&R - Shot In The Dark

Am very interested in as many bottles as I can get reasonably <!-- s:) --><img src="{SMILIES_PATH}/icon_smile.gif" alt=":)" title="Smile" /><!-- s:) --> 2-3 <!-- s:) --><img src="{SMILIES_PATH}/icon_smile.gif" alt=":)" title="Smile" /><!-- s:) --> 1 will do if over that is considered greedy.

I'll let you guys know when the time comes. I'm not sure how long it will take to condition fully but I'd hazard a guess at another 8 weeks at the very least. Then again this whole process has been full of surprises! With the colour and the way it's currently tasting, I would be very keen on doing this again.

(Just to note that we could get in trouble if the forum is used for illicit alcohol sales. Please don't offer drink for sale, or to buy it, if it's not all licensed and kosher.)

A friend of mine owns an off licence and a wine import business so all sales will go through the till there under their licence. I used to manage the place. We have been very open with customes & tax throughout the process as it was the safest way while bringing the beer over from Belgium.
