This progressed much faster than I expected; congratulations!

You're getting brett notes already?!?

My historical porter took 4-5 months for the porter to start getting brett notes. (But the pre-blended lambic already had the brett working on it for quite some time, huh?)

What's planned next for that barrel?

Another lambic blend? Brew and age your own lambic end-to-end?
Something else entirely?
(Dave and Becky Pyle would be the ones to talk to about making lambic at home.)

Thanks a lot for all the responses here guys! Ill bookmark this thread and get back to the interested parties when the time comes to see if you are still wanting some. Ill point you in the direction of the shop ill be using.

The beer will not be the cheapest circa £15 a bottle! At least they are 75cls! The cost of bringing the base beer over was the main culprit along with the cost of good champagne bottles. Mind you some prices of the new lambics are getting very expensive. Drie Fonteinen Lente is a pricy bugger.


Yea it progressed a lot faster than I expected. Theres so much conflicting information out there regarding the production and blending of lambics. Paul Girardin explained that this is due to all of the producers having their own traditional methods.

Once bottled the brett should start working its business after 3 weeks but there might not be much evidence of this for a few months. It all depends on how much sugar the brett has to feed off. Its needs a good amount! Too little sugar and too much sourness and the brett will not be efficient.

There will be other projects on the horizon <!-- s:wink: --><img src="{SMILIES_PATH}/icon_wink.gif" alt=":wink:" title="Wink" /><!-- s:wink: -->

I might try this again though as its produced a very pleasing result.


A lychee lambic is what ive got my eye on next!!
