Its early days still yet lads, but its on the way. I live in a small farm in Upper Ladysbridge and I'm converting an outbuilding into a small brewery. I've got an old 300l system that I'm trying to fix up and I'm dealing with all the legalities etc.
I'm growing hops on the farm and am also doing a dwarf hop trial of prima donna and first gold. Next year (v.exciting) I hope to get my hand on a new dwarf casacde hop. I'm malting barley from the familt farm too and am trying a few old Irish heritage barley varieties.
I am addicted to hops and flavour and my first beer (I hope) will be a big IPA with a really full malt body and hops everywhere. I hope to bottle everything on the farm in 330 and 500ml fliptops.... There is no stout planned yet. Probably a good pilsner first.
