Hi Rupert,
While you are getting things up and running how about you sell some local hops to local homebrewers as a sideline for a few bob ? get your supporters on side before you even kick off....

I love the idea of what you are doing.

I have so many questions! What are your malting facilities like? How much research have you done into the ins and outs of malting grain? Have you tried it yet and what were the results like?

Will you be bottle conditioning or force carbonating? Kegging? Casking?

Dwarf Cascade? Are you talking about Summit? It sounds like it has a lot of potential, but not a lot of track record yet. Have you brewed with this hop?

Being Danish, I am a bit currious who you visited in Denmark? Was it Per Kølster by any chance?
