noby, would you say that the mincer is compulsory, or can I manage to stuff the sausages manually ?

An organic butcher at my local farmers market sells fantastic sausages (although making your own has to be better. Is there no end to your talent Noby?)

After hearing me rave about them some went out and bought a few. Give it time and using orange juice will help select for the yeast over spoilage bacteria

Well my one serves two purposes: mincing and stuffing. I'm sure you could pick up a reasonable plastic one. If you're buying minced meat, you just need some method of squeezing it into the casing. I have seen sites that sell basically a glorified silicon gun like this:
