I got some of these big syringes. Was thinking I could chop the end off, and use the piston to push the meat, that I would have minced by my butcher.

You'd be stuffing one sausage at a time. Might be a bit of a pain. I'm sure you could adapt a funnel, and use the heel of your hand to push the meat through.

Not necessarily, I can fill the body of the syringe, push with the piston, remove the piston, re-fill etc... while the casing would be rolled around the syringe. Well, I guess there's one good way to know if it works !

Sure, give it a go. I guess the bigger the syringe the less filling you have to do.
