I'm intrigued by the quantities though. I looked at the website above and there seems to be a minimum purchase of casings of 40yds/metres, with a shelf life of three months. Depending on the size sausage, one would have to eat between 18 and 28 sausages per week, every week! That seems like a lot of sausages....

Is there anywhere one can get smaller quantities of casing? I suppose it's not the most expensive ingredient, but I hate waste.

A lot of the on-line sites I came across sold to butchers in much larger quantities.
But just to put it in context, I used about 2.2Kg of pork to make the sausages the other night, and used 20yards of casing with a little bit of wastage). They're in the freezer now, and with the other 20yards I'll probably make a few different types. I'm hoping for a good summer with plenty of barbecue weather.
