I have this feeling this is not the right place to post but there is so much knowledge amongst you all (a bit of flattery doesn't hurt), so :
I've been making yoghurt for a while now, and recently invested into more cheesemaking equipment. I was successful (as much as a French taster can tell) in cottage cheese, but I'm stuck for anything requiring ageing. I'm looking for wax to coat, for instance, cheddar and the likes. Would anybody know where I could source it in Ireland ? I found scores of UK suppliers, but once again, the shipping is like twice the price of the material.

You could also try Brouwland[/url:1xk55g0f]. Go to Dairying - Other Additives and you'll see some cheese coatings there. I assume they're wax with or without an anti-fungal agent as it says:

I've just made my first hard cheese, a farmhouse cheddar, some months ago and covered it with black wax from Moorlands, linked below. I've done a bit of research and these guys are my first choice for supplies. But I was buying other equipment from them as well and they had everything I needed(including the excellent Kadova mold)

The plan this spring is to grow my own jalapeno peppers and make chili cheddar, surely an awesome combination?!

If you find a good Irish supplier please let me know.

I hope you'll be shipping that stuff abroad Ichiban! That sounds like a bloody great combination.
