Simple recipes are all I do!

My basic brown bread recipe:

1 1/2 cups white flour
1 1/2 cups wholemeal/brown flour
1 3/4 cups milk (or buttermilk or half and half milk/cream)
1 tsp bread soda
1 fistful of seeds or nuts or pinhead oatmeal. Whatever comes to hand.(sunflower seeds are nice)
Mix dry ingredients. Add milk. Quick mix (don't over do it) Into a greased loaf tin (or thicken with more flour and shape on a tray). 190deg oven for about 50 mins. or until the bottom of the loaf sounds hollow. Remove from oven and wrap in a (damp) tea towel for a softer crust.

I basically use this recipe, replacing the wholemeal and oatmeal with spent grain. Ales with crystal malt work best for me. I normally don't bother with stout spent grain, as the loaf can be a little grayish, and not as appetising looking.

Thank you all for the links. I knew the UK website, but the shipping is quite dear to Ireland. Goat Nutrition Ltd[/url:1s52coa6]'s people are friendly and they have a good range of moulds and penicilii.

I've drank chili beer and it certainly is a particular taste. And like tequilla beer it does not go with Mexican food! Each to his own.

FYI, cheese wax can be reused again and again so the initial cost can be justified over time. And I'll check out your contact, thanks.

I definitely agree with the potential for another category within the ICB forum along the lines of 'sustainability' or 'craft product production'. I'd like to try my hand at dry curing ham (Parma style) and would love to have others on board to share knowledge and on-going experience.
