This will be my last meetup although I should be back in November for my wife's Trinity graduation ceremony and hopefully that will be the third week of November during the ICB meetup.
This is my Rochefort 10-flavored, but Rochefort 8 strength Rochefort "clone" beer. I oak-aged 1 gallon out of 4 with a brand new mid-toast american oak infusion spiral and forgot just how much oak flavor these things impart. The 1 gallon batch was CRAZY oaky (the 2nd most oaked beer I've ever had) so I blended it into the main batch. The result is still REALLY oaky at this point which makes it seem much sweeter than it really is for a FG of 1.009. I really think it'll be something magical in 6 months.
