If the second sentence is supposed to support the first in some way, then I'm not persuaded. The fact that it's possible that an old brewery (or any brewery) might gain an ill-deserved reputation entails nothing about the possibility of there being great breweries.

Even with a brewery that produces 100% great beer it's possible that a future batch will taste like a three-day-dead badger.

But that puts the bar so high it'll float into space. If a great football team plays crap and loses a few games, we don't say they're no longer a great team, and we certainly don't say it entails that there cannot be a great team.

Wouldn't it be more sensible to say that a great brewery is one that, among other things, generally produces great beer?
