After just finishing a kit wheatbeer (Coopers) I tasted the first bottles of it over the weekend. I was a bit disappointed with the taste, becuase it had that tang, for which i was trying to work out what i had done wrong.

After the inital tasting I decided to do a comparison between my wheatbeer and a bottle of Paulaner wheatbeer. The differences were huge. The kit beer was 1) far more tangy, 2) tasted like it had more sugar in it, and 3) was less bitter and had far less of a hop flavour.

I'm guessing the reasons for these three differences are 1) the kit tang, 2) low yeast attenuation and 3) a lack of fresh hops or a short bittering boil time.

I'd be interested to try out a few other comparisons too to see if the same differences crop up again

2 and 3 seem like they would be easy enough to fix, throw in some hops and maybe alter the sugar to something else? Or would people recommend instead of altered kits that extract etc is the way to go?

Thanks for the advice.

I decided last weekend that I'd move over to extract brewing, to give me control of these problems, and immediately ordered supplies. I received a nice parcel with a bag of light DME, three varieties of hops (Challenger, EK Goldings, Target) and a few different yeasts yesterday.

For my first extract brew, hopefully tonight, I'll keep it as simple as possible with no speciality grains etc., and make it hoppy. Still deciding on exact hop combo, but that's what a working day is for.

Eh it was not really advice more ball hoping in the hope someone with more knowledge then me tells you what to do.
