Fatcontroller - the site below has a wealth of information and his techniques work: <!-- m --><a class="postlink" href="www.cider.org.uk/frameset.htm">www.cider.org.uk/frameset.htm Your friut should be fine but you might want to add some crab apples to increase the tannin content. Too much malic acid from the cookers could be an issue, but allowing them to age a bit might help. The bashing apples with a stick plan will work, but be prepared to sweat! 50kg of apples should give you about 20-25litres of juice.
