Hello All,

I'm Paul, I'm a farmer and lab tech near Mallow and I'm hoping to start up a micro (nano?) malthouse here on the farm.
At the minute I'm working on my process and hoping to start trial batches over the winter. I'd love to hear peoples thoughts and ideas on this.
Is there anything you love to brew with but can't get here? Something different you'd like to try?
It's going to be a floor maltings with half ton batch sizes and if a grain will grow on the farm for me I'll try malting with it.

I would indeed, wheat, maybe spelt or emmer if I could get the seed. I was reading about a hybrid rye thats being trialled as a field crop here too.

How about diastatic brown malt? One for the porter recreationists there.
