Going from previous experience I would give everyone the beer glass automatically and not mention the whiskey glass. If people want whiskey they can use the beer glass like you say or come back and buy it/swap the beer glass. When it get's busy you'll not have the time to be faffing around with people debating over which glass to take just.

Here's the timetable- I would say choose what time you want to be there and for how long.

Sat., we open at noon, and last call at 12.30
Sun., we open at 12.30 and last call at 10.30 (unless we have a big crowd and it makes sense to be open longer)
Mon., noon and last call at 12.30
