Hi
I'm Stan and new here.
Well I have to say I love this site. Great advise and clearly dedicated people.
I got a home brew kit for my birthday in January, got my larger kit and kilo of sugar and started fermenting. Well after reading the articles on this site I gave up that one to the shore gods. Got a brupaks "West riding wheat" kit, fermented and now priming in my King keg. Hopefully it will work out all right.
I have two other Lager kits that I bought in the first order one is "Tom Caxton" the other is "Strong Irish lager". I am collecting Grolch fliptops for my next brew. I have a couple of "Beer Kit Enhancer" packs to use in place of the sugar recommended by the kits. A couple of questions?
The yeast in the above kits; is it lager yeast or ale yeast, they both say ferment at 18 to 20?
I have some wheat beer yeast, would I be better to use that?
My current brew has been priming for almost a week now in the shed with a brewbelt to keep the temp up. I will take the belt off now, but how long would you recommend I leave it before drinking?
Cheers
Stan.

Hi Stan,

The yeast will be ale yeast. Generally lager yeast is not included with kits as it needs more precise temperature control (and lower temperature). It won't make a massive difference to the taste of the kit so go ahead and use what was included for now. Alternatively you can use a neutral ale yeast such as US-05 or Nottingham/Gervin.

Bad luck on the Ireland job, hope the next one works out better.

Welcome aboard.

Most beer of average strength is somewhat drinkable after a week of conditioning before serving, especially the wheat beer you have on the go. Wheat beers can be served early because they don't require much maturation. So go for it, and perhaps note the changes in flavour over the next few weeks (if it lasts that long...)

Welcome Stan,
i made the whole first beer kit mistake too. tried to drink it but ultimately it was horrible and then i found this site, as Bigears said the Yeast should be Fine, Hope the Wheat turns out well, if your based in munster (or wherever) a few of us are meeting up in the fransciscan well in Cork on the 16th you are more than welcome to join us.

Great; I'll try it today 18 years 3 months ago #5

I try the wheat beer later today; hopefully it will be good. And I'll get sterilized again and put on one of the Lagers. I'm in Dublin so afraid won't make it down to Cork, but you all have fun anyhow.
