When can we buy some?

I'll take a few bottles off your hand.

My sister is going to be well pissed off that someone is bringing blackberry beer to market before her!

Well done on getting the law stuff sorted out! I'd say you were made jump through some hoops, you want to use wild yeast to make your beer?

Exactly right. We have spoken to HMRC and they were very helpful if a little confused at first.

Thanks! Your sister might beat us as once the beer is added in August there is no way to tell exactly how long it will take. When making Kriek it can sometimes take anywhere between 4-12 months before the beer is bottled. Knowone knows with blackberries. No idea when it will be ready for sale.

We do know that we will not release many bottles initially.

Well I'm on my way to Belgium! Currently on the boat to Scotland then it will be the long drive down to London.

Everything should be added to the barrel by this time next week. Oh and we are using Girardin lambic. I'm really excited about visiting Girardin as they are a very secretive brewery that will not do tours. The last journalist they let in was Michael Jackson back in 1993. They also produce all of their own ingredients so they appear to be completely self sufficient. In true Belgian style there's no website or email address. However I must admit that Paul Girardin and his wife were very friendly and helpful regarding my request!
