Haha I wish it was growth...the fermentation was so violent that it went off like a shotgun! Those are blackberries on the ceiling lol
It smells great, a cross between Blackberries and a strawberry cocktail. Its very fruity at the moment. The colour is bright red at 11 days in the barrel. Ive no idea how much that will develop as the fruit breaks down.
Taste is very good too. If I could bottle it now I would be very happy with the results. Fingers crossed the conditioning in the barrel goes well too. Its still fermenting away like mad at present but thats what you get for adding 9.5 stone of blackberries.
