I won't be around on the 23rd (coming back from Germany that day), but there's probably no point trying to accomodate me (although thanks for the sentiment Aidan) as February is likely to be gobbled up with personal stuff pre-move.

I would be able to swing it!!! Could make train connections on the day to arrive in Rosommon at 1020 or 1442! I am away from here for next few days but will go along with whatever arrangements are made

I take it your assumption is we're going with the original plan i.e. making a trip to Roscommon Town for the brewery visit with the evening spent in Galway City. This sounds like a better option for an overnighter than staying in Roscommon Town - for one thing you'll find pubs in Galway with Hooker on tap. For another it's not Roscommon Town.

Shoestring budget obviously rules in a hostel. I haven't lived in Galway for a while so I'm sure the current residents will have better knowledge. Here's one I've heard is quite decent:
