I asked him about this. He used to rehydrate but then had problems with the yeast sticking to the bucket. Now he just waits until the fermenter has started to fill and then opens the Man-way and pitches it in dry.

Yeah I gave up rehydrating US05, just another infection risk and the instructions on the pack say "sprinkle on to wort". I reckon they know their own yeast better than I do.
