I've been looking into using nettles instead of hops, but can only find recipes which involve fermenting nettles (no malt, so not really a beer). Was wondering if anyone had tried this and might be able to steer us...

Badger do a nettle hopped beer called Stinger.

That sounds pretty close to what you want to do, I'd suggest it's a good launching point for some research.
