IPA by Mitch Steele 13 years 3 months ago #7

Ive read this book, thought it was great.

As far as the recipes go, they are written in percentages and pretty loose on exact numbers.

For hop schedules it tells you IBUs, times and varieties but not actual weights.

Choosing how to present recipes is a bit tricky. Some people don't use brewing software (and don't want to work out ratios etc.) so it can be frustrating not to be given exact weights for a given batch size. However, if you do have software etc. it can be frustrating to be given those exact weights without percentages because you then have to work those out using the software in order to scale the recipe according to your own needs.

I prefer easily scalable recipes that use percentages myself, but I think there are ways to combine the approaches. For example, authors could give exact weights for a given batch size and include percentages in parentheses after each grain and hop addition. That would certainly please everybody who is likely to read the book, but it's extra work for the author.

I've read the book and was very impressed with the recipes. The bad reviews I've seen harp on about his use of percentages. One person I read even complained that since Steele only gives hop quantities in percentages you can't work out the actual amounts for a given batch size. But this misses the fact that the IBUs are given in each recipe, from which it is easy to reverse engineer the hop bill. I haven't come across a negative review yet that actually persuades me there is anything wrong with the recipes.

I personally think the book is by far the best introduction for homebrewers to the techniques and strategies for brewing hoppy beers. It's certainly more useful on this score than Stan Hieronymous' book on hops, which is a bit of a let down in my opinion (unlike his brilliant book on Trappist brewing).
