BONJOUR!!!
We're a bunch of people who want to learn how to brew everything and anything. Starting with mead, lager and wine.
Would love some advice to guide us on our quest!

Lager is a bit hard for a beginner beer-brewer as it requires low-temperature brewing equipment, but you can make a blonde ale quite easily at room temperature, using a neutral yeast, that gives a lot of the same flavour profile.

I'd agree with the TBN on the lager/pilsner.

If your starting out - typically the easiest thing to brew (at room temp) is probably a standard british beer - dont expect to clone anything tough - a close second would be a pale ale - something like a seirra nevada.

Some tips I would give starting out -
Breakup brewing into 3 - PreBoil - PostBoil and fermentation.

The preboil only requires things to be clean - dont sweat it if you dont hit your numbers on the hydrometer.
- in post boil you really need everything the beer touches to be sterilised (eg with milton) - otherwise the beer could be ruined.
And for the last phase - fermentation - again ensure you vessel is sterilised - but try to keep the fermentation vessel in a place in the house between 18-20. The Kitchen is not a suitible place ! I would recommend the centre of the house away from windows where there is no draughts.
