After only two days we're down from 1.078 to 1.010!

Doing a Double IPA. Threw the wort in on top of the left over yeast cake from an earlier AIPA.

Gotta love it.

Just transfered an IPA from primary to secondary after one week.
US05 dried.
OG 16%brix=1061. Checked grav after transfer. 9%brix=1040. Hmmmmmm.
Temp steady 20c. Decent yeast cake left in primary(which I have saved in 2 sterile jars)
Mash was 67c so should be well fermentable.
Hopefully it will ferment on down in secondary.
Thoughts?

Brix? What equipment are you using to measure?

I thought so. Once there is alcohol in the solution I don't think you can use a refractometer.

I think you need to use a hydrometer. (Or use Jacob's software)

I got the refractometer recently and compared results with the hydrometer while mashing and sparging. The results were very similar so I fell in love with the refractometer. Instant reading from one drop instead of the mess etc with the hydrometer. Saves the world.
So I stopped checking the results with the hydrometer. It never occured to me that alcohol spoil the accuracy. This is the first reading done since pitching. So I'd better start searching the bin for that hydrometer?
