I had a (thankfully) non-beer related experience with DMS today....
I was on a pelagic trip off the South of Ram Head (Co. Waterford), which was organised for birdwatching and photographing. Some of the party brought DMS along, which is used to attract some seabirds (e.g. Storm Petrels). Turns out DMS is a natural compound that is metabolised by sea organisms (algae/plankton I think...), which in turn are food for the petrels.
Thankfully I've never made a beer with DMS problems, and hope I never do, as the stuff I smelt today was absolutely horrible!!!
