I have been meaning to post an update about my 7 month old lagers...all in all, I'm quite pleased with them. The helles is quite nice, but perhaps has a bit too much pilsner malt bite for my tastes. My dunkel is fairly good, but the carafa malt that I used to color it gives a bit of a roasty bit that is a bit too much like a schwarzbier. The octoberfest is good, but the doppelbock, that one makes me smile! I'll try to bottle up a bit to send out when I can. The blackberry/chokecherry lambic is coming along nicely as well and once that is bottled, a sample will be heading east to you.
Hope things are going well in Dublin. It's been raining here nearly every day (which it never does) so I feel like I have never left!
