I think I'll leave this one to the scientists, except to say this: If you accept their theory of smaller bubbles = longer lasting head then the bubbles in draught Guinness would have more to do with the gas used. Mixed gas, which is predominantly Nitrogen produces smaller bubbles. Head retention can be improved by using malts which have more dextrins (e.g. CaraPils or Wheat) but someone else can explain the science behind this I'm sure.
