I would advice strongly thinking about the product you want to produce. Hooker has done well and not gone up the major stout or lager brewers or trying convince a narrow minded public. Just my two cents

I'm in the process of starting up a micro in Dublin. Great to hear you're out in Mayo. I spend a lot of time out there with my in-laws and the county badly needs some decent beer.
