I'm a fan of Ryan's of Parkgate street, across the Liffey from Heuston station. It's a great Victorian style pub and a lovely spot to enjoy a hooker and two of the Wells beers. I even noticed a Galway Hooker poster in the toliets that advertised itself as winner of ICB's Best Irish Beer 2007 award.
Ryans even has a "Beer on the Month" which it displays in the small corridor to the toilet; an empty bottle wired to a presentation board with a few lines description. A great idea for a great pub, and part of the FXB group so great food too!

Westbrew thats the first pub i ever drank in. At the full adult age of 18 obviously.

Dingle is the spiritual home of Irish pubs. But its been so long since Ive been there I could not name a currently great one.

I was in Tigh Bhric in Kerry a few weeks ago. It's a really gorgeous pub and I spent a lovely few hours there in front of the fire on a freezing cold Friday evening.
I tasted the beer at the Septemberfest and was disapointed. I was hoping it might taste better on home turf but was dissapointed again; it's just not up to scratch unfortunately. On the plus side though they did have bottles of Franziskaner in the fridge.
