Just heard an ad. on Radio Nova for Lillie's celebrating the fact that their micro-distillery (First in Ireland) is up and running!

Really! A distillery in a night club!

Any more info?

Have the Revenue finally gone "Doo-Lally"?

Lillie's is owned by the Porterhouse so I assume they're referring to the Dingle Distillery?

There is a real working distillery inside Lillie's. They do Make Your Own Gin nights for corporate groups and the like. They supply the spirit and botanicals, you come up with the recipe and take the bottles home at the end.

Right, So its not actually distilling then!

So if its an infusion then I'm sure its Ok but if they boil and condesnse .....

If as you say there is "a real working distillery inside Lillie's" then things will get interesting!

I think it's re-distilling rather than simply infusion. Pretty standard in gin making and it's certainly how they make the Dingle gin in Kerry.

Edit: here's the detail[/url:3c6wdpca]. "Vacuum distillation", if that means anything. And you only get 500ml out of each session.
