I think it's safe to say that Will knows his shit...[/quote:23xmdscz]

Hahaha, agree to both the literal and figurative versions of that statement! <!-- s:D --><img src="{SMILIES_PATH}/icon_biggrin.gif" alt=":D" title="Very Happy" /><!-- s:D -->

Has anyone seen the Inishmacsaint brewery in person?

I'm curious exactly what type of milk vessel was used for the Mashtun there; it's obviously insulated but I'm curious how wort separation works and whether it was a homemade job (and how it was created) or whether there was a piece of dairy equipment that was a good fit for a mash tun.

My home town has a little 4 US barrel brewery now (upgrading to 8 BBL 12 months after opening) that was built based upon used dairy equipment (with a hot tube cover used to insulate the top of the mashtun; lol!) so I'm interested in the equipment.
